Today I made a salad that I heard about at my former schoolmate Callie's cooking class. Callie has her own blog Rawxy (Raw Foxy Living) and has a lot of great recipes. The kale salad is very easy to make and it has a unique, fresh taste to it. Great spring pick. You can see the recipe below. Check it out!
Massaged Pumpkin Seed Kale Salad
1 head of kale (trimmed, washed)
1 bunch parsley and cilantro (chopped)
1 sml or 1/2 lrg avocado
1 Tbsp pumpkin seed oil
1 Tbsp lemon juice
sea salt to taste
handful of pumpkin seeds
raw parmesan
corn, tomatoes (optional)
In a large bowl, combine kale, herbs, avocado, pumpkin oil, lemon juice and sea salt. Massage vigorously for 5+ minutes until tender. Top with pumpkin seeds and raw parmesan.
